In LF2, all the characters were humans, unless Julian and his Justins were something else. O_O
What would be interesting would be if later on, you'd encounter non human enemies, perhaps something based on mythologies and such.
Apart from that, a character, or a villian I'd like to see would be a character simhilair to the Knights in LF2, but even more glorified, a magnificant helmet with gold decorations (perhaps something like the Pegasus helmet in Soul Calibur 4), a flowing cape and perhaps a robe like clothing beneath his bulky armor...
But what would make him interesting would be if was focused on using powerfull spells that could hit from a distance, but compensating it by making him slow... very slow...
Another idea would be a character that perhaps you believe is the villian at the start of the game, I dunno, I imagine a character with something that looks like a general esque version of a medievil or victorian trenchcoat, but beneath it, he got even more coats, making it look like layers of clothing. Oh, and maiby a long ponytail style hair...
Perhaps, he could have a sword that has been so used, that the handle has been broken, so he has to hold it by the... uh... what is it called? The two things sticking out to the left and right side... bah, my bad english, sorry.
His abilities could be based that he, like the first villian, is slow, but his attacks are FAST. This could make for an interesting strategy to try and lure your enemies into a trap that he could utilize to destroy his opponents, heck, a smack from his sword could hurl the enemy straight into other enemies, hurting them aswell...
ofcourse, it's only an idea... what do you think?
